What's Up Wednesday

What We're Eating this Week...

Yesterday I did a look into my Meal Planning but I will share what we are having for dinners this week.

Monday- tilapia with veggies and rice
Tuesday- turkey tacos with bell peppers, onions, mushrooms, salsa, cheese and rice
Wednesday- date night at local restaurant I will have a pecan chicken salad with grilled chicken
Thursday- I am hosting a little Stella and Dot get together so will snack and then plan to have grilled shrimp
Friday- we head to Dallas because Saturday we are going to VAIL, CO

What I'm Reminiscing About.. skiing. since 2012 my husband and I have gone skiing...3 year ago I tore my ACL so praying my knee does well this trip. I ski in a brace for extra support and we always do ski school. :-)

What I'm loving...

The weather...yes it is January and 70 plus degrees most days but I can enjoy running outside instead of on the treadmill.

What We've Been Up To...

Lot of driving back and forth to TX....more details to come.

What I'm Dreading...

What I'm Working On...

Stella and Dot parties....getting the house ready for Mardi Gras and Valentine's Day!!

What I'm Watching/Reading

Watching...The Bachelor

Ok I haven't watched in past seasons for a while now however, OMG this season has just got be going OMG constantly. Between the whip cream, bouncy house and shoveling manure I mean goodness gracious.

I love THIS IS US....this week on the episode Kate does POUND. I teach this workout class at the studio I work at and literally started screaming when the episode came on.

What I'm Listening To...

I am not a big radio/music on fan..I listen to Hits One or Y2K country in the car when driving. I mainly listen to what is on TV and that is a lot of Live with Kelly, Good Morning America, etc.

What I'm Wearing...

I literally with these temperatures could be wearing sports right now...

However, I am enjoying pairing the new Stella and Dot collection with my outfits.

What I'm Doing This Weekend...

Packing and heading to Colorado to hit the slopes!!!

My to-do list never seems to end...I need to declutter the house....and I am loving my new LuLaRoe leggings! I can't wait to wear my Valentine's Day ones. :-)

Life Lately...Meal Planning

I have several friends that have asked so I thought I would let you into a little version of my meal prep Monday.

I have an eating plan that changes weekly from my trainer.

However, typically for breakfast I have greek yogurt, egg whites or oatmeal. I can add fruit, granola and honey or make an omelet with veggies when having egg whites.

I love all fruit especially berries...give me all the blueberries, strawberries, and raspberries and I am a happy girl.

This is my favorite brand of granola right has tiny pieces of chocolate and coconut.

I have 5 meals a day...for the next 4 I have 2 ounces of meat at each meal. I can have ground turkey, talapia, chicken or shrimp. 

When I have ground turkey I love to make a taco salad. At each meal I can have veggies or salad. I like to make a turkey taco salad with veggies, lettuce, tomato, salsa and cheese. When I cook my ground turkey I add garlic powder and onion powder for my seasoning. 

With my chicken I love to put BBQ sauce in the crockpot and add my frozen chicken. 6 hours on low or 4 hours on high. This is a quick easy meal that I can eat on all week.

With talapia I love to use SLAP YOUR MAMA seasoning or Seafood Seasoning. 

I love to either cook my shrimp with seafood seasoning or use cocktail sauce.

My meals are all super simple and easy to prepare.

For sides I always have either my veggies and salad, or jasmine rice, boiled eggs, or sweet potatoes. It is important for my meals to change weekly so I will add in different veggies...ranging from spaghetti squash to asparagus, brussel sprouts, carrots. etc. 

Change it up and make it FUN!

Happy Monday...Happy 2017

The first Monday of a new year....this week is going to be a bit crazy for me but I am ready to hit the ground running and start off the new year.

This is going to be my year to shine bright and SPARKLE. I ate my small bowl of black-eyed peas for good luck last night so I am sure it is going to be a much better year for me. :-) Do you have any New Year's traditions?

I wanted to do a little weekend recap of how 2016 ended...

In 8 years of marriage my husband and I have always been gone on a New Year's cruise with my in laws so we were at a loss as for what to do this year.

We went to a local restaurant and decided we would just sit in the bar area and enjoy dinner. Well that plan failed...they weren't serving any food even bread in the bar area because they had over 400 person with reservations for the evening.

On to PLAN B....we went to a local pasta restaurant called Giuseppe's Pastacaffee that opened in November. We have been once before and let me just say the tortellini and the tiramisu are amazing. I am not usually a big tiramisu fan but their's is very light. We also had some yummy garlic bread. 

The pasta place only serves beer and wine and closes at 9 P.M. so we went back to the Steakhouse for another round of drinks and just to enjoy each other's company.

We had champagne chilling in our fridge so about 11 we left the Steakhouse came home and watched Dick Clark's special on TV. We popped the cork, drank champagne, kissed at midnight and called it an evening.
