What We're Eating this Week...well in about 7 weeks the hubby and I are going to Disney World. I want to look lean and toned in my shorts and my swimsuit so I have been on my meal prep. I have 5 small meals a day that include protein (talipia, shrimp, chicken or turkey), rice and lots of veggies. I try to prepare all my food in advance so I am prepared for the week.

My favorite meal on my prep is always BREAKFAST. This week I get oatmeal with berries, Greek yogurt and honey!! YUMMY

What I'm reminiscing about...I am wishing I was on SPRING BREAK!! I used to be a school teacher and would enjoy the week either skiing or on a cruise.

I don't truly know how I am feeling about the time change...I will so be looking forward to it this summer when I am up later watching baseball, and grilling dinner outside but right now ahhh I don't like waking up when it is dark.

The gym I worked at back in Shreveport got voted the best classes and instructors....I was very blessed while living in Shreveport to workout here and also teach. I am proud of the owner Lauren and all the fabulous instructors.

Stella and Dot new releases have launched and I am loving the new white tassels and sneak peak this adorable clutch for the SUMMER!!

Thank you to my fabulous friend Ashley and her travel guidance we are gearing up for our trip to Disney World at the beginning of May.

My husband hasn't been to Disney since Middle School and I haven't been since college. In our 8 years of marriage we have never been to a Fair or an amusement park. CRAZY but TRUE!!

This past week, we booked our Fast Passes and I am beyond excited about some of the rides we choose!!

Soarin' is a new ride at EPCOT where you basically hang glide...I am super pumped about this ride!! I am sure we will also enjoy the test track at Disney but we didn't book a fast pass for it.

When I was a kid, I didn't particularly enjoy EPCOT...however the last time I went they had added rides and I enjoyed learning more about the different cultures. I have eaten at both the Japanese and Chinese restaurants at EPCOT and I honestly don't know which one I would say is better. I enjoyed them both!!!


When we visit Animal Kingdom we have a Fast Pass for Expedition Everest...I don't remember this particular ride the last time I was there so I am excited to try it out.

At Hollywood Studios we are riding one of my all-time favorites...Rock n' Roller coaster featuring Aerosmith!!
